When young, he had a Mexican dish that had chicken and corn on the cob whole. Need a prescription?

I think it is a soup, maybe a stew, I only know that the girl had been stewed and whole pieces of corn on the cob. Maybe some roasted tomatoes, onion and cumin of course, I can not remember what else! Recipe needed now! I like what I type!

Chicken broth? 2 tablespoons canola oil 1 medium onion, chopped 1 rib medium celery, chopped 2 cloves garlic, minced 1 tablespoon chili powder 1 teaspoon ground cumin 6 cups chicken broth, low sodium canned 1 / 4 cup canned green chilies 1 (15 1/2-ounce) can pozole, drained or frozen corn kernels 4 canned whole peeled tomatoes, chopped 1 teaspoon dried oregano 1 cup chicken breast skinless shredded (about 4 ounces) 1 / 4 cup chopped fresh cilantro Juice of 1 lemon Kosher salt and freshly black pepper Heat oil in a medium saucepan heat means. Add the onion, celery, garlic, chili powder and cumin and cook until onion softens, about 5 minutes. Add the chicken stock, bring to a boil, reduce heat slightly and simmer, uncovered, for 10 minutes. Add the green chile, posole, tomatoes and oregano and cook for another 5 minutes. Remove from the heat and add the chicken, cilantro leaves and lemon juice. Season to taste with salt and pepper. Serve hot. Mexico also have a side of Spanish rice and lemon / lime wedges to go with it. Add the rice in your soup Spanich and squeeze a little lemon or lime juice for some extra zing.
