What can I make from shrimp, 1 green bell pepper & white rice?

I'm trying to make dinner tonight. and I can't figure out what to make. I'm trying to make shrimp scampi but, I went to the store and they didn't have any shrimp scampi sauce. So my question is: what can I make from the three ingredients above? Please help. I only have two hours to make it.

That's a great stir fry setup though you will need some other common ingredients....hopefully you have ANY other veggies too (potatoes, carrots, tomatoes, other peppers, corn, etc..) to add to the mix.

With or without them,..this could still be good.

2 teaspoons olive oil
1/2 teaspoon low-sodium soy sauce

Directions
1.Prepare the rice.
2.Meanwhile, heat the oil in a medium skillet over medium-high heat. Add the shrimp and vegetables. Cook, stirring occasionally, until the shrimp are cooked through, 3 to 5 minutes.
3.Stir in the soy sauce. Transfer to a plate and serve alongside the rice.

The other thing is that just shrimp Stir fried in a light butter sauce with a little splash of lemon/lime/orange juice goes great on rice. If you have eggs and a little soy sauce you can stir them in with the rice as you cook it.
