BLUE BERRY OATMEAL PANCAKES.
1 cup flour
1 teaspoon baking powder
¼ teaspoon salt
¼ teaspoon cinnamon
1 / 3 cup rolled oats in ¾ cup cranberry, or as much as you want.
¼ cup brown sugar, 1 egg, 1 cup milk
1 tablespoon oil.

Combine flour, baking power, salt, cinnamon, oats and brown sugar. Beat Mix well. The egg, milk and oil. Make a well in dry ingredients and add egg mixer at a time. Stir until moistened and the batter is still large. Drop spoonfuls on the grill and add the blues as indicated in the procedure for pancakes. 1 bay leaf
1 cup rice crude
1 cup frozen peas
salt, to taste
pepper, to taste

In a large skillet heat oil and brown chicken on both sides.
Add green pepper, onion and garlic and cook for 5 minutes.
Add tomatoes, chicken broth, bay leaf, salt and pepper to taste.
Cover and cook for 20 minutes Add rice, stir well, cover and simmer for 20-30 minutes or until all liquid is absorbed and chicken is tender.
Add the peas, cook until hot.

Yield: 6 servings

Baked Chicken Nuggets

1 1 / 2 pounds chicken thighs, boned skinless
1 cup cereal crumbs, corn flakes type
1 / 2 teaspoon Italian herb seasoning
1 / 4 teaspoon garlic powder
1 / 4 teaspoon onion powder
1 teaspoon paprika

Remove skin and bone, thighs, cut into small pieces.
Place cornflakes in plastic bag and crush using a rolling pin.
Add remaining ingredients to crushed cornflakes. Close the bag tightly and shake until blended.
Add a piece of chicken slowly crumb mixture. Stir to coat evenly.

Serving size: 3 ounces
Yield: 4 servings

20-Minute Chicken Creole
1 tablespoon vegetable oil
2 whole boneless chicken breasts
1 can (14 1 / 2 oz) diced tomatoes with juice
1 cup chili sauce, low sodium
1 green pepper, large
2 stalks chopped celery ribs
1 onion, small
2 cloves garlic chopped
1 teaspoon dried basil
1 teaspoon dried parsley
1 / 4 teaspoon cayenne pepper

1 / 4 teaspoon salt

Pan over medium-high heat (350 degrees in an electric skillet). Add vegetable oil and chicken and cook until no longer pink when cut (3-5 minutes).

Baked fish and vegetables
4 frozen white fish fillets or cod or bass (a total of 16 to 20 oz.)
16 oz frozen mixed vegetables
1 small diced onion
1 teaspoon lemon juice or lemon thinly sliced
1 tablespoon parsley - chopped fresh or dried
4 10x12-inch square of aluminum foil

Preheat oven to 450 degrees.
Separate and place the fish fillets in the center of each foil square.
Combine frozen vegetables and chopped onion in a bowl and mix. Spoon vegetables around steaks.
Sprinkle with lemon juice (or the top with a slice of lemon) and add the parsley on top. Fold ends of foil to form the leakproof seal.
Bake for 10 minutes. Serve.

3 ½ cups fresh or frozen cranberries (not thawed)
1/3-cup water
2/3-cup sugar
2 tablespoons cornstarch
few grains of salt
1 tablespoon lemon juice
6 medium to large tart shells
(You can double half cooked pie shells)

Grind cranberries ½ cup, add water and bring to boil. Remove from heat and press through sieve. In a saucepan, combine sugar, cornstarch and salt. Add sifted juice (made to ¾ cup of water). Mix well and cook, stirring constantly until glaze thickens and becomes clear, about 5 minutes. Cool slightly, then add lemon juice. Arrange whole berries tart shell and spoon glaze over berries. Cool before serving.

Preheat oven to 400 degrees. Spray a 12-muffin pan cups with nonfat cooking spray. In a large bowl, combine all dry ingredients.
