Smoked BBQ Baby Back Ribs Recipe

While it is relatively common for baby ribs, grilled or roasted for a relatively short period the best results come from a low and slow smoking process with the right combination of pieces of wood to give a truly distinctive aroma and flavor.This smoked rib recipe is proven, and makes delicious tasting ribs that are a joy to eat.

Ingredients

1 cup sugar
1 cup non-iodized table salt
1 / 2 cup brown sugar (dried by exposing in greaseproof paper at room temperature for several hours)
5 tablespoons + 1 teaspoon chili powder
2 tablespoons + 2 teaspoons ground cumin
4 teaspoons cayenne pepper
4 teaspoons freshly ground Black Pepper (important)
4 teaspoons garlic powder
4 teaspoons onion powder

To make great ribs, baby, you need to choose the best quality back ribs of baby back you can find about two pounds in size, adjustment of the inner membrane of the stomach from the side. Any remaining excess fat again if, be cut and discarded.

For the dry rub, combine all ingredients in a bowl, then transfer and store in an airtight container.

Preparation ribs, baby back

Sprinkle the ribs with the dry rub a couple of hours before cooking and allow them to reach room temperature.

Avoid over seasinging, a light coat and the only constant is required. The spices will form a nice red coat after sitting for an hour or less. This is what you want.

Cooking baby back ribs

For best results, smoke ribs, baby back Weber Smokey on a mountain, Big Green Egg, or Kamado.

First turn on the smoker with about 12 pounds of charcoal and oak 3 pieces white and two pieces of cherry wood. The wood pieces should be approximately 3 "in diameter.

The coal should be started on a chimney style starter to avoid the use of starting fluids because it can (and usually does), can alter the taste. Wait until the charcoal has turned gray / white.

At this stage, remove the bark of oak and cherry White House, not soak.

During cooking you will notice that there is much less smoke produced as you would normally see when using wet wood chips, that is perfectly fine, and tastes extend to the ribs in the same way.

Keep the water-pan smoker complete with tap water, boiled water that has been allowed to cool slightly, if you prefer, and the temperature control using grids bottom ventilation in smokers only.

Avoid closing the top vent at all costs, as this produces less the desired results, and If your smoker does not happen to have, use a thermometer to barbecue, so you can keep an eye on smokers internal temperature.

Ribs should be placed rib and cooked on racks around 225 degrees for 3 hours at that point the lid is first opened, and then turn on the flags of the rib. At this point all vents on the smoker must be fully open.

With the smoking vents open, the temperature inside the smoker should hit the range of 240 to 270 degrees.

Monitor progress of the ribs every 30 minutes until done. You will know when they are ready when the baby ribs turn brown and the meat is thrown down more than half an inch in the long bones, usually 1-2 hours after smoking more.

Remove ribs from smoker and new baby generously sauce both sides before cutting into individual ribs.

Tip: Allow ribs to rest for at least 10 minutes before serving wrapped in aluminum foil to retain moisture and delicious juices.
