Can you make peppercorn sauce without preparing steak on the stove?

My husband plans to grill some steaks tonight and I immediately thought of the peppercorn sauce-covered steak I had last month at my favorite restaurant.

Yes but you need a concentrated stock (preferably not canned or cubes). To sauce a couple of steaks, you would start with a quart or more of home made stock reduced down to about 1/2 cup. If you can get your hands on a jar of demi glace (reduced stock), use that. I can get it at wegmans or kings market near where I live. Just place it on low heat and let it simmer for about 1 hour or slightly more.

Saute some chopped shallot in a pan with butter until wilted.

Add 1 ounce good brandy and flame allowing alcohol to burn off for 1 minute or so.

Add reduced beef stock (veal stock is even better for this) and stir well

Add an equal amount of heavy cream and reduce the mixture down by 1/3.

I like using canned green peppercorns for this. Blanch 2 tablespoons green pepper corns in boiling water for 10 seconds and add to sauce.

Remove pan from heat and slowly swirl in 1-2 tablespoons butter to give sauce a sheen.

Serve over cooked steaks preferably with pommes frite (french fries).
