Real homemade Chili Con Carne - The Texas Classic "Bowl of Red"

The real "red plate" does not contain any beans, nor have any tomatoes. The meat used is a dish of minced meat, not ground beef.

All ingredients used in this recipe for chili meat can now be found in today's markets in most areas of the United States. Serve this chili with flour tortillas, corn tortillas or cornbread.

Ingredients:

3 pounds boneless beef dish, fat and cut into 1 / 4 "pieces
2 tablespoons bacon grease
4 tbsp good dark chile powder
2 teaspoons granulated garlic
6 dried ancho chiles
A dried New Mexico Chile
2 dried guajillo chiles
2 cups cold water
3 cups unsalted beef broth
2 tablespoons onion powder
2 large cloves garlic, crushed
1 1 / 2 teaspoons garlic powder
1 teaspoon red Chile
2 teaspoons white pepper
2 teaspoons cayenne pepper
1 tablespoon cayenne pepper
1 tablespoon oregano dry
1 tablespoon ground cumin
1 12-ounce bottle of beer
4 fresh serrano chiles, seeded and chopped
2 tablespoons unsweetened cocoa powder
2 tablespoons red wine vinegar
1 / 2 teaspoon Tabasco sauce
1 tablespoon brown sugar
1 / 4 cup masa harina (corn flour)

Getting There:

In a large pot or heavy saucepan, heat the bacon grease over medium-high heat. Brown meat in fat 2 tablespoons dark chili powder and granulated garlic. Cook in batches, if necessary.

Set the width of New Mexico, guajillo chiles and 2 cups of water in a small saucepan. Cover and simmer gently over medium-high heat. Reduce heat to low and simmer for 20 minutes or until soft. Drainage, but we reserve the cooking water.

Place chiles in a food processor with about 4 tablespoons of the reserved cooking water. Puree until mixture forms a paste smooth, and no evidence of skin Chile. Mix the mashed Chile in beef. Add 2 cups broth and bring to a boil over high heat. Reduce heat to low, and slowly simmer for 30 minutes.

Mix onion powder, garlic powder, garlic, cayenne pepper, ground red chile, paprika, pepper white, salt, cumin, oregano, remaining 2 tablespoons of chile powder, dark beer and beef broth left in the pot. Bring to a boil over high heat and then reduce heat to low and add the peppers, chiles, chocolate, vinegar, Tabasco sauce and brown sugar. Cover and simmer for 40 minutes.

In a small bowl, mix the dough with about half a cup of broth until smooth. Pour into the pan, and stir and cook uncovered over very low heat until the meat is very tender and sauce is thick, or about 2 hours. Stir occasionally so mixture does not stick.

If chili is too thick, add a small amount of boiling water. Serve immediately, or better yet, chile con carne refrigerate overnight and serve the next day, reheat in an oven microwave. This recipe makes at least 6 servings.
