2 cups Maida or all purpose flour

2 tablespoons hot oil

1 onion

1 carrot

½ cup peas

1 clove garlic (optional)

1 teaspoon cumin seeds

2 teaspoons finely chopped ginger

1 teaspoon turmeric powder

1 teaspoon mustard powder

5-6 finely chopped chiles

Spice powder (garam masala any)

Chopped cilantro leaves

2 tablespoons oil

INSTRUCTIONS

Make the dough

Sift the flour and make one at its center. Add 2 tablespoons hot oil in the well. Then mix well. Add an adequate amount of water prepare semi-hard dough and knead well. Cover and keep aside for about 15-20 minutes. When you start to make a cover for samosa, mix the flour again.

For the filling

First boil the potatoes and carrots and cut into small pieces. Add cumin seeds, seeds mustard and turmeric powder in hot oil in a skillet. When they start to appear, add the onion with the oil and fry until translucent.

Now we have to fill the filling into the dough to make a samosa. Make lemon sized balls of dough. Place the balls on a flat surface and press with a roller to obtain a medium thickness. Court to make a half circle. Take one of the semicircles. Dip your finger in the water's edge and the line half-circle with a wet finger. Then give a cone shape. Fill with about 1 tablespoon of prepared stuffing and seal tightly. Likewise, make pies with all the dough.
