Staying healthy with the South Beach diet

I have a slight problem with diets - no, I have several problems with diets. First, the lack of strength of will. Secondly - Either everyone has to go on diet or anyone. I refuse to enter into the trap of cooking separate meals for each family member. With the South Beach Diet both these objections are easily overcome. The foods used are easily available and fits very well into a normal lifestyle and healthy that nobody needs even know. Whether you enjoy fast food or gourmet dining - and lets face facts most of us, at some point - there something to enjoy.

Roast Beef Wrap for 4 people as a light lunch or picnic meal

1 ¼ cups low-fat cream cheese

4 of the tortillas flour (9 "or 10"). You may substitute homemade flat breads, as chappattis

½ sliced red onion

4 leaves of spinach or other salad greens

Roast beef, 8 thin slices

Spread a small amount of cream cheese on tortilla. The layer of spinach, onions and meat roast, roll and fold. For 4 people that would spread my beef with the smallest amount of mustard to take a bite.

Lemon Couscous Chicken for 4

1 ¼ cups water

1 tablespoon extra virgin olive oil

2 cups broccoli or cauliflower florets

2 cups couscous

½ teaspoon garlic powder

2 cups chopped chicken

3 tablespoons fresh lemon juice

¼ teaspoon lemon zest

In a large saucepan, bring water, oil, broccoli and garlic powder to boiling. Meanwhile cover the couscous with boiling water and let stand until all water is absorbed. You will need enough boiling water to cover and then about a finger thickness higher than couscous. Add the couscous, chicken, lemon juice and lemon peel to the broccoli mixture. Simmer until hot and then remove from heat. Cover and let stand 5 minutes. Using a fork, fluff lightly, then chill and serve cold. I would add some chopped mint or coriander (cilantro) to mine.

Chocolate Dipped Apricots

It seems hard to believe that this is a list of diet recipes, but they are there. I guess that just depends on the amount you eat. Some of the longest-lived people on earth live high in the Himalayas on a diet with large amounts of dried apricots in it.

2 oz, 50 grams of dark chocolate

24 dried apricots

1 tablespoon chopped pistachios

Melt chocolate. In a microwave can be easily to burn, so they are perhaps best done over a pan of hot water, stirring until completely melted half. Dip half of apricots in chocolate. Let excess drip. Place the apricots in wax paper. Sprinkle the pistachios over the chocolate-covered portions, and refrigerate until that chocolate is set.

Grilled salmon with rosemary for 4 people

1 pound, 500 grams of salmon

2 teaspoons oil Olive

2 teaspoons fresh lemon juice

1 / 4 teaspoon salt

Pinch freshly ground black pepper

1 clove garlic, minced

2 teaspoons fresh rosemary leaves, minced or 1 tsp, crushed

Fresh rosemary sprigs (optional)

Court the fish into 4 portions. Combine olive oil, lemon juice, salt, pepper, garlic and rosemary in a bowl and use this to brush on fish.

Grilled, arrange the fish on a grill or use a grill basket sprayed with olive oil spray for cooking. Grill over medium coals until fish flakes easily (allow 4-6 minutes per 1 / 2 "thick). If the fish is over 1" thick, gently turn is half the grid. No more cooking fish or dried by very good quality to begin with. To broil, spray the grill grilling skillet with olive oil spray for cooking and arrange the fish on it. Broil 4 "from heat for 4-6 minutes per 1 / 2 "thick. To serve garnish with rosemary sprigs if available. Serve with a green salad. Those not on a diet of rice or couscous could have with this.
