These Make Great Chinese Food and Wine Pairings

Wine pairings with foods can be a challenge, and this is especially true of Chinese food. Consider a German Riesling wine; you might be pleasantly surprised at the pairing.

Because of the mix of flavors, selecting the right wine for Chinese or Thai cuisine necessitates your identifying the dominant taste of a dish, whether it's sweet, sour, salty, or bitter. There tends to be quite a variety of tastes in one Chinese meal. It often consists of a variety of dishes, some sweet, some spicy, some fruity, smoky or even delicate. You will likely encounter chicken, lobster, pork and duck in the same meal. Despite your best attempts at wine selection, no one wine will accommodate the huge range of flavors and textures you may encounter.

When it comes to German Riesling wines and Chinese food, Scientists who study our sense of taste have shown that the different taste qualities, such as sweet, sour, salty, or bitter, tend to inhibit or suppress one another. When we talk about wine and food, we usually say they balance or compliment one another.

For instance, sour (or acidic) and sweet also suppress one another; adding sugar to grapefruit reduces the tart flavor. Even thought the level of acidity or sourness has not changed, the sugar changes how it tastes to us. And so it is with the Riesling grape's ability to develop high sugar levels while keeping its acidity that creates white wines that not only age very well but also compliment Chinese food as well. You'll find Riesling wine comes in several varieties from dry to very sweet. The sweetness level of a Kabinett or Spatlese counterbalances the Chinese food's salt and sour.

Another reason German Riesling wine is an excellent wine for Thai and Chinese food is that it is so good at quelling the heat of chilies which are commonly used in both foods..

While many advocate pairing Gewurztraminer wine with spicy (hot) Szechuan dishes, it can work but Gewurztraminer's higher alcohol levels (13-14%) tend to intensify the burn to a degree.

Gewurztraminer, which literally means "spice grapes", comes in a variety of subtle flavors. They can all work well, as can a French Pouily Fuisse or a Sauvignon Blanc.

When moving from spicy to the more mildly seasoned Cantonese food, you will still do well with the sweeter wines. For these Chinese food and wine pairings, consider a German Riesling Kabinett or Spatlese for excellent results. If it's Shanghai cuisine with its rich and often high-fat-content meats, the tannins in a red Bordeaux wine makes for a nice combination.

For Peking cuisine, with its heavier meats like duck and beef, try a red Burgundy like a Pinot Noir. Also a Merlot from Pomerol or St. Emilion can make a good food pairing.

If the dishes have fruit, they will pair well with Pinot Noir, Riesling, even Merlot. For those dishes with substantial amounts of almonds or peanuts, a Sherry or tawny Port goes well.

Pinot Noir, Chardonnay, Riesling, Gewurztraminer, Petite Sirah or Zinfandel wines work well with foods that are dominant in fruit and spice flavors, such as those with Szechuan peppercorns, chili peppers, mustard or curry.

If you want some other choices or don't care for sweeter wines, you might try a mild, full-bodied Merlot (that's not too acidic) or a Chardonnay. They generally go well with a variety of foods so you're probably safe with those choices.

Just remember, you're goal is to above all, enjoy the meal. So following the advice given here, you and your guests should have a wonderful meal now that you know the best Chinese food and wine pairings.
