Crunchy carrot salad
Low sodium, this salad is more than meet their daily vitamin A requirement.

1 1 / 2 cups fresh carrots, grated
1 unpeeled red apple, chopped
1 / 4 cup raisins
1 / 8 cup toasted almonds (optional)
1 / 2 cup low fat plain yogurt
1 1 / 2 tablespoons mayonnaise, fat
2 teaspoons lemon juice
Green salad

Combine the carrot, apple, raisins, almonds and a salad. Mix remaining ingredients in a separate bowl and add to carrot mixture. Serve on salad leaves. Makes 3 servings.

Apple Squash Casserole
This dish is rich in Vitamin A, a good source of vitamin C, cholesterol free, and almost no sodium.

2 1 / 2 cups fresh winter squash, cut into 1 / 2 inch
1 1 / 2 cups cooking apples, pared and cut into half inch slices
2 teaspoons cinnamon
1 teaspoon nutmeg

layers alternating squash and apples in an 8 "x 8" pan, ending with apples on top layer. Sprinkle spices over top layer. Cover with foil and bake at 350 degrees F in the oven for about 45-60 minutes until squash is tender. Remove foil and bake another 10-15 minutes to remove any excess liquid that may have accumulated. Cool slightly before serving. Serves 4.

Winter squash baked

1 acorn or pumpkin butternut
2 tablespoons maple syrup
1 teaspoon cinnamon
Margarine or cooking spray

Preheat oven to 400 degrees F. Grease baking sheet lightly with margarine or cooking spray.

Cut the squash into slices 1 / 4 inch thick. Remove the seeds in each slice and arrange squash in single layer on baking sheet. Bake the slices of 8 minutes, turn and sprinkle lightly with maple syrup and cinnamon. Bake for 8 minutes longer, remove from oven and let cool. Serves 4.

Papa Pizza

1 / 2 cup broccoli, chopped
1 / 4 onion, chopped
1 / 4 cup carrots, finely chopped
1 small tomato, sliced
2 baked potatoes
1 / 2 tablespoon margarine
1 / 2 tablespoon flour
1 / 2 cup skim milk
1 / 4 cup cheese, grated

Cook broccoli, onion and carrots in a small quantity of water until tender and set aside. In a saucepan, melt margarine and add flour. Add milk gradually, stirring constantly. Cook until sauce thickens, stirring occasionally. Add cheese and stir until melted. Add the vegetables to the cheese sauce and stir. Split open potatoes. Pour equal amounts of cheese, mixed vegetables on each potato. Cover with tomato slices.

Serves 2.

CHOCOLATE CHIP MUFFINS

2 cups ground

½ cup white sugar

3 ½ teaspoons baking power

½ teaspoon salt

1 egg, beaten

1 cup milk

¼ cup oil

1 cup chocolate chips

Bake at 400 F Bake 18-20 minutes @

GRANDMOTHER OF SHORT whipped PAN COOKIES

Beat with mixer until creamy. Drop on cookie sheet and bake at 350 F (175 C) until golden brown.

Yield: about 5 dozen cookies

Clearly, what began as an investigation of bulk peanut butter sent to nursing homes and institutional cafeterias is now much broader.

It includes not only the peanut butter, but baked goods and other products that contain peanuts sold directly to consumers. Health officials say up to one third of people who became ill did not remember eating peanut butter.

"The goal is peanut butter and a wide range of products that could be peanut butter on them," said Dr. Robert Tauxe, chief of the division of foodborne diseases at the Centers for Disease Control and Prevention.

The Canadian Food Inspection Agency announced the withdrawal of nine varieties of energy bars amid fears they could be contaminated with contaminated peanut butter or peanut butter.
