I've noticed this more difficult economic times and more people are turning to foods that cost less, that means that for beef and most people are eating more and more chicken. In fact, my husband, who works for a grocery store as a cutter meat, says sales of beef have been reduced by 30% last year but sales of chicken are 25%. With all of us eat chicken more and more that means that we're probably eating every night that becomes mundane reality. So what to do?

Chicken Rice
3 C cooked rice (can use white, instant coffee, or even Rice-a-Roni)
2 chicken breasts cooked and diced (I cook for 5-6 breast my family of 4 and freeze the rest for other)
1-2 C of your choice of frozen vegetables (I personally like something green, like broccoli, peas or beans green with mine)

Add all this together over medium heat and add water if necessary for 10-15 minutes. Then, season with pepper and a little salt if desired, garlic powder.
Makes 4 servings.

This recipe for feeding up to four and only cost me about $ 5 to make. That ends up costing just over $ 1, a person and that to me is absolutely amazing. Want another simple recipe to keep you going for another day? Of course I do, so here it is.

Chicken and gravy
4 chicken breasts
2 cans cream of chicken soup
1 C uncooked rice (again, white, brown, instant, or whatever)
2 c water for ordinary rice (1 ¼ C for a moment)
