Always good to have some tasty casserole recipes in hand for everything from family dinners to picnics, church socials, the tone of office meals etc. If you're tired of wearing the same old casserole recipe again and again and wants to bring new life to the occasion, here are some very good recipes for you. I recommend Easy Florence goulash. Florence has always been like a second mother to me and was also manager of the local school cafeteria at the time when the local ladies were in the first and the food cooked from scratch. This recipe was a favorite among students. Florence is about 80 years and still does for me when I'm in the area. Love you, Florence! If you prefer chicken over beef background, try this stew of chicken and broccoli. Both recipes are good for diabetics, too.

EASY Goulash

2 pounds ground beef
1 small onion, diced
1 / 2 bell pepper, diced
3 / teaspoon garlic powder 4
salt to taste
1 1 / 2 cups macaroni
1 can No. 2 can tomatoes, chopped a bit
1 pound Colby cheese, grated

Crumble meat ground and fried with onion, pepper, garlic powder and salt. Cook macaroni until tender, drain. Drain excess fat from the mixture of ground beef. Add the macaroni and tomatoes. Stir well. Place in a baking dish and cover with grated cheese. Bake at 350 degrees until cheese melts and is light brown (about 20 minutes).

Broccoli CHICKEN BAKE

2 pkg. (10-EA-ounce) frozen broccoli
1 cup cooked brown rice
2 tablespoons butter
2 tablespoons flour
Salt 1 / 2 teaspoon
2 cups milk
1 / 2 cup shredded Swiss cheese
2 cups diced, cooked chicken
3 / 4 cup bread crumbs
1 / cup grated Parmesan cheese 4
1 tablespoon butter

Cook broccoli and drain well. Combine broccoli and rice, place in an 8-inch square baking dish that has been sprayed with nonstick cooking spray. Melt 2 tablespoons butter and flour mixture and the salt. Add milk to butter mixture and cook, stirring, until thickened. Remove the mixture from the heat and stir in Swiss cheese, and chicken. Pour chicken mixture into the mix broccoli. Combine bread crumbs, Parmesan cheese and 1 tablespoon butter. Sprinkle crumb mixture over chicken mixture. Bake uncovered at 350 degrees for 30 minutes.
