Suggested Meat Blends for Breakfast Sausage: Venison sausage: Use 15 lbs. Venison trim and 10 lbs. of 50% lean pork or beef trim. Old fashioned breakfast sausage: Use 25 lbs. of 75-80% lean pork trim. Directions: Grind the venison trim one time Add the pork trim to the ground venison and grind together.
