My family, being mostly German and Scandinavian, often challenges me to make authentic recipes. My husband challenged me to make Hungarian goulash, and for some time now I asked for a recipe for Swedish meatballs with a twist - it had to be an easy crockpot recipe.

A crockpot Swedish meatball recipe seemed ideal for me Swedish meatballs are a dish that is marinated only improve throughout the day. It occurred to me that, and although you can use balls frozen meat to make quick and easy version wonderful, I've included a very tasty recipe for homemade meatballs as well.

2-12 packages de oz meatballs

1 cup water

½ teaspoon nutmeg

1 teaspoon minced onion

½ teaspoon garlic powder

½ teaspoon dill weed

½ teaspoon black pepper

4 oz goat cheese cubes

1 cup sour cream

Spray crock pot with nonstick spray. Mix all ingredients except cheese and sour cream in slow cooker, cover and simmer in 6-8 hours under high 3-4 hours. Stir in cheese and sour cream, cover and cook on high 30 more minutes. Serve the potatoes with noodles (most traditional), mashed or rice, and garnish with fresh parsley, if desired.

Homemade Meatballs

4 pounds of ground beef (I like to use 3 pounds ground and 1 minced lamb, but any combination will do)

1 Â ¼ cup bread crumbs

3 eggs

½ cup water

¼ teaspoon allspice

1 teaspoon ground mustard

1 onion, finely chopped

Mix all ingredients in large bowl (by hand works best). Roll into balls. Bake on lightly greased cookie sheets at 450 degrees for 10-15 minutes. Should be refrigerated and used within a few days, or can be frozen for up to 2-3 months.

Black Hungarian Wax Organic Heirloom Hot Peppers are plants that grow 30 to 36" with green foliage, purple veins, and beautiful purple flowers. The 2 to 3" fruits resemble large jalapenos with a pointed end. Black Peppers eventually turn red and are mildly hot with good flavor. The wax in the name is a reference to the slightly waxy texture of the rind of the pepper. Despite the texture, the rind is perfectly edible and, in fact, very flavorful. Peppers demand warm soil and warm temperatures, but before planting them, if possible, start seeds indoors. Choose a sunny location with at least eight hours of sun each day that provides good drainage. Plant peppers outside three weeks after the last frost. Soil temperature should be 60 degrees or above.
