The Cuisine of India is characterized by its sophisticated and subtle use of many spices and herbs. Spices play a very important role in Indian cooking. Indian food is incomplete with out these spices. Indians readily use spice in their food, teas, drinks and even sweets not with these wonderful aromatics for their exquisite flavor. In ancient times, spices were as precious as gold; and as significant as medicines, preservatives and perfumes. India, the land of spices plays a significant role in the global spices market. No country in the world produces as many kinds of spices as India and with a quality that is unmatched.

 

Spices are typically heated in a pan with ghee or cooking oil before being added to a dish. Lighter spices are added last, and spices with strong flavor should be added first. Curry is not a spice, but a term which refers to any side dish in Indian cuisine. It could be with a gravy base or a dry item. A curry typically contains several spices blended together. The secret of the masterly art of Indian cooking requires a thorough knowledge of the properties of each spice and its blend with other spices. So one can say that the characteristic of each curry relies entirely on the balance of herbs and spices that go into its creations. Local influence distinguishes curries from one region to another.

 

Indian spices possess medical properties due to which these are world wide famous. Pepper was used to cure digestive ailments. A turmeric paste was applied to burns, itchy skin etc. Ginger was the tried and tested remedy for liver complaints, anaemia. If you suffered from nausea, fever, headaches, or eye diseases, you'd be sure to get a dose of cardamom. Coriander was meted out for insomnia, cloves for spleen, kidney, and intestinal disorders.

 

Indian spices can be mixed in specific amounts to make Spice Mixtures used in daily cooking. Some of the famous spice mixtures are Garam Masala , Chat Masala etc. The composition of the mixture might vary according to region but the basic ingredients remain same. Many of the formerly exotic Indian spices are becoming increasingly familiar to the western cook and can be easily found in any grocery store in the west. The unique blend of spices for each dish makes differentation among the dishes and award them the special fragrance which is only due to the perfect mixture of exotic Indian spices.
