Ground Beef Casserole

During the mid to late summer, our eggplant from our garden goes into the season. One of our favorite eggplant recipe is so easy to make casserole with addition of ground beef.
This recipe has some time to do, so I would recommend for a weekend dinner, however, their efforts be done will be rewarded as it is very delicious.
Beef and Eggplant Casserole
2 tablespoons butter, softened
1 / 3 cup finely chopped onion
1 clove garlic, minced
3 cans (8 ounces) tomato sauce
1 1 / 2 lbs. ground beef
2 teaspoons oregano
1 teaspoon basil
Parsley 1 / 2 teaspoon
1 / 8 teaspoon anise seed
1 eggplant (about 1 1 / 4 pounds in size)
2 eggs, lightly beaten
1 / 2 cup seasoned dry breadcrumbs
1 cup grated Parmesan cheese
2 / 3 cup vegetable oil
1-2 packs of mozzarella cheese, slices
In a large skillet, melt butter and saute onion, garlic and ground meat until meat is no longer pink. Stir in tomato sauce, oregano, basil, parsley and anise seeds, mix well. Simmer the mixture for 7 minutes on low heat then set aside.
Preheat oven to 350 degrees. Lightly coat a 9 x 13 "baking dish with nonstick vegetable spray. Wash and cut up eggplant 1 / 4" thick pieces.
Combine eggs and 1 tablespoon water in a medium bowl, mix well. In a large bowl, combine the bread crumbs and 1 / 2 cup grated Parmesan cheese. Dip eggplant slices in the egg mixture and then into the breadcrumb mixture until they are coated in crumbs.
In a skillet with a little bit of vegetable oil, saute eggplant until browned on both sides, drain on paper towels.
Place a layer of eggplant in the bottom of your baking dish. Sprinkle with some of the remaining Parmesan cheese, top with slices of mozzarella cheese and then cover with some of the sauce. Repeat layers until all ingredients are used, ensuring that cover the top with mozzarella cheese.
Bake in a preheated oven for 25 minutes or until cheese is melted and bubbly. Makes 4-6 servings.

Cheese Potato Bake meat (www.recipezaar.com) Ingredients 1 pound ground beef, cooked and drained 2 (4 ounce) cans mushroom stems and pieces, drained (optional) 2 (5 3 / 4 ounce) packet au mix 4 cups scalloped potatoes boiling water 1 1 / 3 cups milk 2 tablespoons butter 1 teaspoon salt 1 / 2 teaspoon seasoning salt 1 / 2 teaspoon pepper 1 cup Cheddar cheese grated Directions 1 Place the meatloaf in a greased 9x13 baking dish and top with mushrooms. 2 potatoes Combine and content packages of sauce mix, water, milk, butter, salt, seasoned salt and pepper. Pour over meat and mushrooms. 3 Cover and bake at 400 for 30 minutes or until hot. 4 Sprinkle with cheese and bake uncovered for 5 minutes or until cheese melts. Let stand for 5 10 minutes before serving.
