Use a round biscuit cutter to create the "yolk". Place the cutter in the center of the tofu round. Brush the center with a bit of carrot juice. Spray the pan and cook until lightly brown at the edges. Garnish with parsley or tarragon. If eggs are not a problem, try this breakfast wonder: Parboil enough spinach leaves to create a bed. Sprinkle with garlic powder. Drain and plate. Using low-fat cooking spray, saute mushrooms lightly and place atop the spinach bed. Add one or two poached eggs and garnish with lemon-pepper vinaigrette.

Sweet Tooths Not Withstanding

A nutritious and filling breakfast should always include raw fruit or juices to get energy levels going and satisfy the early morning sweet tooth. Fool your palate with French Tofu Toast.
