The rainy season in the tropics is those times of the year when the sun is directly overhead. The enhanced solar heating makes huge masses of moisture-laden air masses
rise in the oceans and rain forests and precipitate continual rain. If you look at a satellite image of earth you see these
zonal patches of thunderheads over land and sea areas
directly under the sun. These patches move with the seasons. Following in their wake are the doldrums, where
it becomes drier.

As The Wet Season Ends It's Time To Hit The Top-End

The Northern Territory stretches from central to the northern tip of Australia and covers more than 1,350,000 square kilometres. It is the least populated of all the states and territories and about forty percent of the territory is aboriginal trust lands. The capital, where you can easily get a motorhome rental, is Darwin, lies on the north-western tip, the Timor Sea to the west, Beagle Gulf to the north, and the Arafura Sea to the north-east.

Excellent sealed roads connect the Northern Territory with its neighbours. The Stuart National Highway runs north-south to South Australia, The Victoria National Highway runs east-west to Western Australia and the Barkly National Highway intersects Stuart Highway and runs east into Queensland. State Highways may be sealed or unsealed; the many outback and four-wheel drive tracks are mostly unsealed. Darwin is easily accessible by international airport and the Stuart National Highway.

Two distinct zones divide Northern Territory: The Top End, the northernmost quarter is tropical, while the southern Red Centre is semi-arid to arid. The Top End is lush tropical savannah and intermittent rain forest. Several perennial rivers flow through dramatic canyons and gorges, mangrove swamps and wetlands, and then drain into the saltwater estuaries along the northern coast. The Top End, even though it it the Southern Hemisphere summer, has a wet season from November through to April, with monsoon rains and tropical storms. During the "winter" it has a dry season from May through to October with high temperatures average in the mid-30s C and 30% humidity. During the wet season, many rivers are swollen and roads may be impassable. Dry season allows road access to the numerous parks, nature preserves and vast countryside, and with the moderate climate, is an ideal time to discover the Top End.

The Top End's many parks and natural areas include Kakadu National Park, a World Heritage Site important for not only its spectacular natural beauty, waterfalls, crystal-clear pools and native wildlife, but also its cultural heritage. Aboriginal peoples have continuously occupied the area for more than 20,000 years. This rich history is illustrated in hundreds of rock art sites and thousands of other important archaeological remains. Kakadu, approximately 280 km east of Darwin, is accessible by sealed roads, but its many four-wheel drive tracks provide access to the more remote and rugged areas. The largest of the national parks, Kakadu should be savoured, not rushed. Spending several days in the area gives a flavour of the Top End, like multi-coloured sunrises over red sandstone cliffs or the roar of water cascading down spectacular gorges.

Covering almost half of the Top End is Arnhem Land, a vast aboriginal trust occupied mainly by the Yolngu people, adjoining Kakadus eastern border. Arnhem Land is renowned for its inland fresh water and coastal saltwater fishing. Art galleries throughout the lands display the timeless, sacred indigenous arts of the Yolngu and sell works of art by local artists. Throughout the year sacred ceremonies and festivals continue the traditions of the native people; several are open to non-Yolngus. Access to the area is by permit only, although a few places can be visited without a permit. Self-drive is allowed with permits; guided tours are available.

Litchfield National Park, accessible by sealed road between Darwin and Katherine, features spectacular waterfalls, rock formations, and unique magnetic termite mounds. Katherine township, approximately 330 km south of Darwin, is central to Cutta Cutta Caves Natural Area and Nitmiluk National Park, both accessible by sealed road. In Nitmiluk, the Katherine River flows through dramatic, deeply cut sandstone gorges. Both air and boat tours are available to view this stunning natural area. Saltwater crocodiles migrate upriver during wet season, freshwater crocodiles and endemic and endangered species may be seen in Nitmiluk.

Perfect Grilling and Broiling: Heat grill or broiler. Shake or rub Perfect Blend onto chicken or turkey pieces, using about 2 tsp. per pound. Grill over low heat or broil 5 inches from heat, turning occasionally, until internal temperature reaches 170ºF, about 20 minutes for boneless and about 30 to 40 minutes for bone-in pieces, depending on size. Perfect Roasting and Baking: Shake or rub Perfect Blend over entire surface and inside cavity of whole chicken, or onto chicken or turkey pieces, using about 2 tsp. per pound. Roast in 375ºF oven until internal temperature reaches 180ºF for whole chicken, about 1-½ hours, and 170ºF for pieces, about 30 to 60 minutes. Perfect Burgers: Shake Perfect Blend onto ground turkey or chicken patties using about ½ to 1 tsp. per patty. Grill, pan-fry or broil until internal temperature reaches 180ºF, about 7 to 10 minutes.
