Ingredients

2 tablespoons vegetable oil
2 cups chopped onion yellow
Salt and pepper to taste
2 pounds ground beef
1 tablespoon chili powder
2 teaspoons ground cumin
crushed red pepper to taste
2 teaspoons dried oregano leaves
2 tablespoons minced garlic
3 cups peeled, seeded and chopped fresh or canned tomatoes
2 tablespoons tomato paste
3 cups of broth or beef steak
2 tablespoons masa harina
Vegetable oil for frying
2 large Idaho potatoes, peeled and cut into shoestrings,
rinse with cold water and dried
1 / 2 pound of cheddar cheese
1 / 2 pound grated Monterey jack cheese
1 cup sour cream
1 / 2 cup sliced pickled jalapenos

Preparation

Heat vegetable oil in large skillet over medium heat. Add onions, season with salt and pepper, and cook, stirring, until they begin to wilt, about 2 minutes.

Add beef, chili powder, cumin, pepper flakes red and oregano. Season with salt and pepper, and cook until all pink in the meat disappears, 5 to 6 minutes.

Add garlic, tomatoes, tomato paste and material 2 1 / 2 cups beef, bring to a boil and reduce heat to medium-low. Simmer, uncovered, until meat is tender, about 1 hour, stirring occasionally.

Skim milk fat that rises to the surface.

Combine the dough with the remaining cup broth 1 / 2 and mix mix. Gradually add to pan, stirring to blend. The mixture thickens. Cook for 30 minutes, then season again with salt and pepper. It should be thick enough cover the back of a spoon.

In a heavy pot, deep fryer or electric, heat 4 inches of vegetable oil to 360 degrees F. Fry potatoes very small batches until golden, 3 to 4 minutes per batch. Drain on paper towels, then season with salt and pepper.

Preheat oven to 400 degrees F.

Cover bottom of large saucepan, rectangular glass baking dish with very small potatoes.
Combine Cheddar and Jack cheese. Sprinkle cheese over potatoes.

Cook just until cheese is melted, 3 to 4 minutes. Remove pan from oven and spoon the chili on top of french fries. Garnish with cream sour cream and jalapeños. Serve immediately.

For 6 to 8 servings.
