Spicy Turkey Soup

. Makes 8 servings

This soup has the perfect balance between spicy, savory and herbal flavors. Add Monterey Jack cheese and creamy avocado adds. Easy to prepare soup and great idea for leftovers turkey.

Ingredients

1 tablespoon extra virgin olive oil
4 cloves garlic, minced
1 1 / 2 cup onion minced
1 (28 ounce) can diced tomatoes with their liquid
4 cups low sodium, gluten-free chicken broth
1 teaspoon oregano dry
1 / 4 teaspoon ground chipotle or cayenne pepper
1 / 2 teaspoon ground cumin
1 / black 2 teaspoon pepper
1 bay leaf
3 cups shredded cooked turkey (white and black)
1 small bag of chips white corn
1 bunch cilantro, chopped
1 cup shredded Monterey Jack
2 avocados, sliced
2 lemons cut into wedges

Method

Heat oil in large saucepan over medium heat. Add the garlic and onion. Cook, stirring often, 8 to 10 minutes, until onion is translucent. Add tomato, broth, oregano, ground chipotle pepper, cumin, black pepper, bay leaf and turkey. Bring to a boil, reduce to a simmer. Simmer 15 minutes to allow the flavors to blend.

To serve, divide corn chips (about 5 or 6 per serving) into small pieces and place into containers. Ladle the soup into the chips. Sprinkle with cilantro and cheese. Decorating with avocado slices and lime wedges.

Makes 2 cups

2 cups frozen blueberries fresh or thawed

1 onion / 4 cup red onion

1 jalapeño large, seeded and finely chopped

2 tablespoons lime juice cool

2 blood oranges or navel oranges, peeled, sectioned and cut into 1/4-inch pieces, juices reserved

2 teaspoons grated ginger cool

Sugar 1 / 2 cup

2 stalks celery, peeled to remove strings, cut into 1/4-inch dice

1 / 4 cup mint leaves, coarsely chopped

1 / 4 cup pecans, toasted, broken into pieces

Getting There

Place cranberries in food processor and pulse to chop coarsely, about five pulses. Transfer to a medium bowl.

Add onion, jalapeno, lime juice, orange wedges and juice, ginger, sugar and celery and mix gently. Refrigerate at least 1 hour and up to 2 days. Just before serving, add the mint and walnuts, and stir to combine.
