Black Bean Soup

2 onions, chopped

2 stalks celery, chopped

2 cans black beans 15 oz

2 14 oz cans chicken broth

1 tablespoon cumin

1 teaspoon cayenne pepper

2 teaspoons oregano

1 teaspoon salt

ground black pepper to taste

Sour cream

Cheddar Cheese

In a medium saucepan, combine the beans, chicken broth, onion and celery. Add the cumin, pepper, oregano, salt and pepper. Cook over medium heat for 30 minutes.

Reserve 1 cup of soup, puree remaining soup with an immersion blender. Return all soup to pot. Cook over low heat until hot fire through. Serve with sour cream and cheddar cheese.

Chicken Tortilla Soup

3 tablespoons olive oil

1 medium onion, chopped

4 cloves garlic, minced

1 small can chopped jalapeno peppers

2 teaspoons cumin

1 teaspoon chili powder

1 / 4 teaspoon cayenne pepper

4 boneless, skinless chicken breasts, diced

2 cups frozen corn

1 wine / 2 cup dry white

4 14 oz cans chicken broth

2 14 oz cans tomatoes tens

Salt to taste

Crushed tortilla chips

Cheddar Cheese

Sauté onion, garlic and jalapeno peppers with olive oil in large saucepan until are tender, about 8 minutes. Add the cumin, chili powder and pepper and cook 3 minutes until mixture is fragrant. Add chicken and cook until golden about 8 minutes. Add corn, white wine, broth and tomatoes and bring to a boil. Reduce heat and simmer 1 hour. Add salt to taste. Serve with tortilla chips and cheddar cheese.
