What are your favorite (healthy / vegetarian) stuffed tortilla!?

Good for the egg (beaten together ).... about a half cup of egg whites, 2 tablespoons soy milk, half a teaspoon of baking powder (add fluffiness), garlic powder, onion powder, salt, pepper, a tablespoon of flax seed pinch of nutritional yeast and for fillings .. (Corn, salsa, beans, fat cheddar cheese, chili powder, cumin) (any combination of sautéed onions, tomatoes, mushrooms, broccoli, spinach, or other fresh vegetables) (Not fat-free cream cheese, spinach, mushrooms, some lemon juice) (tomato, spinach, Food beginners crumbles, steak seasoning) Okay, well basically I'm completely out of ideas to fill. Would love to hear what you put in your tortillas! Whether it's a random mix (spinach, tomato and condiments determined) or has a theme (Southwest, Chinese, BBQ "chicken", etc) PS. I do not mind some recipes included avocado. im trying to increase my good intake fat! Thanks!

I always use pepper and garlic powder when cooking eggs. ia often make onion, mushrooms, spinach and cheese inside. add cold chopped fresh tomatoes on top once it is plated. I get this vegetarian scramble one of the restaurants i go to ... using zucchini, onion, peppers, mushrooms, spinach and cheese. then cover with slices of avocado and half that put fresh salsa on the side. very good. you could add avocado in the first well. just my opinion, I only like cold tomato and avocado, plus the tortilla / encode after that has been cooked. It's also good to grab a little green onion and sprinkle on top. oh! and morning star veggie burgers makes these maple sausage, sooooo good. pop in the oven for ten minutes and you're done. my coworker said that vegetarian is cook your bacon too, but I have not tried it.
