The fiber-rich black beans is a great alternative to red beans when it comes to chili. The black bean is full of various vitamins that benefit the body also has a mild taste that does not overwhelm the other ingredients in the dish.

Black beans are a staple in Mexico and the southwestern style of cooking. The following recipes all features of this grain in a delectable blend of spices vegetables and meat.

=> Traditional Black Bean Chile

This is a meatless chili, but it contains chicken broth.

In a processor food, add 3 cups of beans and chicken broth and blend until smooth. Set aside.

4 (15 oz.) Cans black beans, rinsed and drained, 1 (14-1/2 oz) can chicken broth, 1 / 2 cup chopped onion, 1 / 2 cup thinly sliced celery, 1 / 3 cup chopped green pepper, 2 cloves garlic, minced, 2 teaspoons olive oil, 1 (14-1/2oz.) can whole tomatoes, undrained, chopped, 2 teaspoons chili powder, 1 / 2 teaspoon ground cumin, 1 / 2 teaspoon dried oregano, salt 1 / 4 tsp.

3-In a saucepan, combine the onion, celery, pepper, garlic and oil. Cook all on medium heat for 8 to 10 minutes, or until vegetables are good and tender. Stir often.

Add beans processed, the remaining beans, tomatoes, chili powder, cumin, oregano and salt. Mix well. Bring to a boil over high heat, stirring occasionally.

Reduce heat to low and simmer 10 to 15 minutes or until flavors are well blended. Stir occasionally.

=> Meat and Black Bean Chile

This dish features boneless rib roast and black beans in a spicy chili sauce.

3 / 4 cup dry beans or black 1 (15 oz.) Can of black beans, rinsed and drained, 3 tablespoons olive oil 2 large green bell peppers, chopped 1 large onion, minced 2 to 4 jalapeno peppers, seeded and finely chopped, 3 cloves garlic, roasted 2 pounds boneless, Chuck, fat trimmed, cut into 1/2-inch cubes, 1 / 4 cup chili powder, 1 tablespoon cumin, 1 teaspoon salt, 1 / 2 teaspoon black pepper, 1 (28 oz.) Can of crushed tomatoes in puree.

Optional: 1 (4 oz.) Can shredded cheddar cheese, 3 / 4 cup sour cream, sourdough bread.

Place beans in large pot or bowl and cover completely with cold water. Soak for 12 hours or overnight. Drain and rinse beans. In a large saucepan, combine the beans and 1-quart of water. Heat to boiling. Reduce the heat to a simmer. Cover and cook for 1 to 1-1/4 hours or until beans are tender.

In a Dutch oven, heat the oil over medium heat until hot. Add the pepper, onion, jalapeno pepper and garlic. Cook for 10 minutes or until tender, stirring frequently.

Increase heat to high. Add to meat and cook, stirring frequently, for 6 minutes or until meat is no longer pink. Reduce heat to low. Add chili powder, cumin, salt and pepper.

Cook and stir for 1 minute. Add tomato. Cover and simmer for 1 hour and 20 minutes. Drain the beans. Add beans to chili mixture and simmer for 10 minutes.

Serve chili with cheese, sour cream and sourdough bread.

=> Black Bean Chili Salad

This makes a delicious chile served with lettuce and tortilla chips.

1 (12 oz.) Package black beans, 2 cups of chopped onion, divided 12 garlic cloves chopped divided, 2 (20 oz.) cans whole tomatoes, drained and chopped 1 pound ground beef, 1 green pepper, 1 teaspoon salt 1 teaspoon pepper, 2 tablespoons chili powder 1-1/2 tablespoon ground cumin, 1 / 8 teaspoon crushed red pepper, tortilla chips, 1 cup shredded cheddar cheese, 1 cup thinly sliced lettuce, 1 avocado, chopped, 1 / 2 cup sour cream.

In a large cast iron pot, add in the beans package and cover completely with water. Bring to the boil. Turn off heat and let beans soak for 4 hours.

Reduce the heat again and add 1-1/2 cups onions, 8 cloves garlic, simmer until the beans are nice and soft. Drain the bean liquid.

Add the tomatoes to the beans and simmer.

Meanwhile, cook ground beef in skillet with onion, green pepper, 4 cloves of garlic, salt, pepper, chili powder, cumin and red pepper, until browned beef.

Drain fat and add meat mixture to beans and tomatoes. Heat thoroughly. Serve with lettuce, tortillas, avocado and sour cream.

Chocolate truffles coated ideas needed! Chili powder to coat?

I did chocoalte dark / bittersweet truffle centers (not flavored). I'm lining them tonight, but I wanted some tips to perk up. I was thinking of coating chocolate semi-sweet and then put some salt on top of people combined "sweet and salty love. Also I thought it might be tasty to add a touch of powdered red pepper on top of some of them. I am open to suggestions. Thank you!

For the coating of chili, I suggest mixing a little chili with chocolate semi-sweet and filling that way (rather than using it as a powder). I make a chocolate cake without flour with powdered chile ancho and chile really works well when mixing it with chocolate.
