- Chipotle Mexican Grill Guacamole Restaurant -
1 ripe avocado, peeled and seeded
1 / 2 small red onion, finely chopped
1 / 2 lime
1 / 2 jalapeno pepper (more to taste), chopped
1 bunch cilantro, chopped
2 pinches of salt
1 clove garlic, minced
Cut the avocado in half and remove seeds. Scrape the flesh with a fork. Before grinding, squeeze the lemon over the avocado. Lemon juice will prevent the avocado from browning, and add some flavor.
Add the onion, jalapeno and salt and mix well.
Once mixed, add the chopped cilantro stir. Grab a tile and add a touch!

1 (2 ounce) package dried ancho chiles
1 teaspoon black pepper
2 teaspoons ground cumin
2 tablespoons fresh oregano chopped
6 cloves garlic

4 chicken breasts or meat of choice
Soak dried chiles in fresh water overnight or until. Remove the seeds. Add
all ingredients except chicken in a food processor food
Spread mixture over chicken breasts and refrigerate for at least one
hours to 24 hours.
Heat grill to 400 degrees F, or if cooking inside, heat small
amount of oil in a skillet or grill pan over high heat. Chicken Salt
breasts to taste. Grilled chicken breasts about4 minutes per side
depending on thickness, until done.
Serve with rice, black beans, or choice of side dish. Garnish with fresh cilantro.

Barbecue:
4 guajillo chiles
2 teaspoons cumin seeds
1 teaspoon cloves Odor
allspice berries 10
1 / 3 cup oregano Mexico
12 sprigs fresh thyme
6 cloves garlic
1 Spanish onion, roughly chopped
1 / 3 cup cider vinegar
1 (6-8 lb.) beef roast
Salt and pepper
1 (2 pound) package dried avocado leaves *
Great for tortilla wrap
Beans, rice and vegetables of your choice.
Toast the chiles, cover with boiling water in a bowl and set aside
for 20 minutes.
Grind cumin, cloves, pepper and oregano in coffee grinder. Drain
soaked chiles, puree in blender the chiles, ground spices, thyme,
garlic, onion, vinegar and 1 / 2 cup water. Blend until smooth.
Push the mixture through a sieve, season roast with salt and pepper. Rub
paste all over meat. Place in a bowl and let marinate for
4 hours, refrigerated.
Heat oven to 325 degrees F.
In a deep roaster pan spread half of the avocado leaves in the
bottom, place meat on top of avocado leaves and scatter the
remaining leaves over the meat. Cover the pan tightly with aluminum
foil. Cook roast 6-7 hours until meat is falling off the bone.
Heat tortillas until soft and warm. Place the barbecue, beans, rice
and vegetables of choice on tortilla. Wrap tortilla in long circular
way to create burrito.

- Chipotle Restaurant Basmati Rice -
1 teaspoon vegetable oil or butter to equal
2 teaspoons cilantro fresh
2 / 3 cup white basmati rice
1 cup water
1 / 2 teaspoon salt
1 lemon
In a heavy 2-quart saucepan heat oil or butter over low heat,
stirring occasionally until melted. Add the rice and lemon juice, cooking,
stirring for 1 minute. Add water and salt and bring to a boil. Cook
simmer until rice is tender and water is absorbed,
25 minutes. Fluff rice with a fork.
