Cooking Pork Ribs
Pork ribs are purchased in blocks, which consists of about 15 bones in each slab. A shelf is cut in half the slab (6-8 bones). The ribs are four categories, defined by the location of the rib cage cut pork from:

COOKING RIBS

Next .. I cut the two end bones off each end ... leaving a slab of 12 bones. Then ... while the fire continues heating, I Squirt some Italian dressing on both sides of the ribs. This adds a unique flavor and gives some dry rub stick to the ribs, while smoking. Then sprinkle Dry massage on both sides of the slab. Try OLD BAY seasoning on the seafood section of Kroger in the case of meat. All condiments used is Rendezvous Bay old, with some cracked white peppercorns! You can create your own dry rub from scratch, do spicy or mild. This is the fun part of ribs .. experimentation with the problem. You do not have to rub the spice, just sprinkle on top, bottom (if you get out of the membranes) ends and sides of the slab. A good rule of thumb is to make sure no red meat exposed unspiced anywhere! WARNING: Stay away from large amounts of salt in your rub, it draws the moisture out of this delicate cut of meat, and dries it out! Cooking time:

At the appropriate time, remove the foil and place the slabs back into the grid .... this happens the kitchen and the company until the ribs if they have gone too soft. About 30 minutes before serving brush ... in a mixture of:
8 parts BBQ Sauce (Cattleman's, Kraft or your own recipe will do) 2 parts honey some RUB (to taste)
No too if you prefer a dry rib ... SWAB IT ON if you want a wet rib.
When the ribs are done, remove the grill and let cool for about 10 minutes (as again, you should do with all grilled foods) before serving. Just before serving, lightly dust the slabs with the dry rub. Cut into 3 or 4 pieces bone, and enjoy! Make sure you have plenty of hot wet Towlettes or strips of cloth soaked in lemon juice, to fix the sticky fingers. Serve with bread or Texas French Toast, beans and potato salad, BBQ with the sauce on the side of those who prefer.
The ribs can be frozen after cooking. Wrap in cling film or aluminum and place in freezer. Leave in foil on the grill if you plan to freeze and cook later. That requires the last hour of roasting / Finish will be achieved in the heating of the oven at a later date.
To cook frozen ribs, remove from freezer and let thaw for two hours. Aluminum foil wrapped and put in an oven at 220 for 45 minutes are almost as good as fresh from the grill! Do not forget the salsa!
