Bidz' Broiled Spanish Mackerel in White Sauce

Ingredients

1 Spanish mackerel, 3 lb

Parsley garnish

1 Lemon, sliced

1 tb Butter

1 tb Salad oil

1 Lemon, juice

8 cloves garlic

3 tb mayonnaise

1 tsp salt

2 tb soy sauce

1/8 tsp ground pepper

 

Instructions

Sauce:

Put in blender: garlic, mayonnaise, lemon juice, soy sauce. Blend till it becomes smooth.

Broiling:

Before broiling rub thoroughly with salt, brush with pepper and work in a little salad oil. Lay on broiler and brown well on both sides, being careful not to break it. Apply sauce and serve with garnish. If fish is large, split down middle of back before broiling.

About Spanish Mackerel:

Description: color of back green, shading to silver on sides, golden yellow irregular spots above and below lateral line; front of dorsal fin black; lateral line curves gently to base of tail.

Similar fish: cero, S. regalis; king mackerel, S. cavalla.

Where found: INSHORE, NEARSHORE, and OFFSHORE, especially over deep grass beds and reefs; absent from north Florida waters in winter.

Size: average catch less than 2 pounds (20 inches).

Remarks: schooling fish that migrates northward in spring, returning to southerly waters when water temperatures drop below about 70 degrees F; spawns OFFSHORE, spring through summer; feeds on small fish and squid.

James Ryan (Matt Damon), be located and brought back to the United States. Capt. Miller gets the assignment, and he chooses a translator, Cpl. Upham (Jeremy Davis), skilled in language but not in combat, to join his squad of right-hand man Sgt. If that is so, this movie gives stereotypes a good name: Tom Sizemore as the deft sergeant, Edward Burns as the hotheaded Private Reiben, Barry Pepper as the religious sniper, Adam Goldberg as the lone Jew, Vin Diesel as the oversize Private Caparzo, Giovanni Ribisi as the soulful medic, and Jeremy Davies, who as a meek corporal gives the film its most memorable performance. The movie is as heavy and realistic as Spielberg's Oscar-winning Schindler's List, but it's more kinetic. Spielberg and his ace technicians (the film won five Oscars: editing (Michael Kahn), cinematography (Janusz Kaminski), sound, sound effects, and directing) deliver battle sequences that wash over the eyes and hit the gut. The violence is extreme but never gratuitous. The final battle, a dizzying display of gusto, empathy, and chaos, leads to a profound repose. Fascinating, discomfiting, and poignant (sometimes all at once), Paris Is Burning documents New York City's recherché "ball" circuit, where members of the black and Latino gay, transvestite, and transsexual communities compete to see who can wear the most outlandish outfits and dance, pose, and generally show off to most outrageous effect. These are folks who live with a double whammy of discrimination, as they are minorities both sexually and racially. But while their tales of rejection by both society and their own families are woeful and bitter, the participants come alive when they hit the "runway" (actually the floor of some old gymnasium) to strut their stuff, liberated from the pressure of blending in with the mainstream. "Whatever you want to be, you be," says one, whether it's a school kid, a country club polo player, a high-rent executive, a character from television's Dynasty (which for some represents the dernier cri in elegance and wealth)… anything goes. Along the way, we meet characters with names like Pepper Labeija, Venus Xtravaganza, and Willi Ninja; we also learn about "reading" (i.e., dissing your competitors), "shading" (a more subtle, non-verbal version of the same thing), and "voguing" (later adopted by Madonna, it combines the poses and haughty looks of your average supermodel). Here's the first trip in what would become one of Paramount Pictures' most profitable film series of the '40s. When this comedy was released in 1940, Bing Crosby and Bob Hope had separately achieved stardom, though Crosby was an established power and Hope still a hot comedian new to movies. In fact, Hope is billed third in Road to Singapore, below Der Bingle and Dorothy Lamour. The script establishes what would be a constant in the Road series: a ramshackle plot, a handful of songs, and plenty of irreverent banter between the two boys. Crosby plays Josh Mallon, scion of a wealthy family, who prefers the vagabond life to his stuffy family; his pal Ace Lannigan (Hope) is only too happy to escape. They end up sharing a waterfront shack in Singapore and vying for the affections of a sarong-clad local (Lamour), amidst stabs at conning the natives with a dubious elixir variously known as "Spot-O" (stain remover) and "Scram-O" (cockroach killer). Singapore isn't as loose as some of the wacky subsequent entries in the series, but it already shows Crosby and Hope grooving to each other's perfectly timed burlesque rhythms in scenes that clearly depart from the script. They specialized in muttered asides, show-biz in-jokes, and gratuitous insults--and this one's got a song and dance number with an ocarina. No wonder it became a franchise. --Robert Horton
